Is it possible to stop my mortgage company from paying my taxes/insurance?

I feel sidelined by my mortgage company after I consistently pay my amount due monthly, and have never been late. Today I get a statement in the mail saying there is a escrow shortage amount of $2700, in which I can pay in full to reduce my monthly payment.

It feels like I'm being taken advantage of just so they pay my taxes and insurance from my mortgage payment.

What are my rights as far as paying my own taxes and insurance directly out of pocket when they are due?

and, if I can stop paying my mortgage company the money for my taxes and insurance, at a later day can I go back and have them pay these. Basically, can I go back and forth? Or is it a one shot deal.
