What does employed at will and such employment contracts that they have in the USA mean in practice?

Does the Boss or a Line Manager actually have the authority in practice to suddenly say "your fired" for no reason, or can one take them to a labour court if necessary?

That system would not actually work or deliver for me, because if you are over 40 and have a mortgage to pay, you are not likely to immediately get another job, and hence start getting gaps in the CV which starts to then cause a problem within itself.

I have full job security in Netherlands where people are on permanent contracts with a pension, sick pay, maternity, paternity leave and six weeks paid holiday, not including ten days public holidays from day one.
