Using equity from a paid off house to buy another house?

My fiance and I are looking to buy a house. My fiance owns a home that is completely paid for. It was left to him by his mother when she passed away. My question is could we use the equity from his home to buy another home instead of getting a mortgage? Any advice would be appreciated!
